【OUTLINE】

A master chef of Washoku—Japanese cuisine—with over 40 years of experience will carefully convey what is required of the art, from ingredient preparation to plating. In addition, participants will learn the proper way to hold chopsticks and rice bowls, and other manners unique to Japan and the etiquette of Washoku. The participants may make requests in deciding the menu (extra costs may be incurred depending on the request).

Enjoy ingredients nurtured by the climate of the Setouchi Region and the skills of a chef who has mastered the fruits of the four seasons.


Observe the ways Japanese senses delicately express the variations in the four seasons.


This tour plan is a special experience to savor Washoku—Japanese cuisine—which has been designated as an Intangible Cultural Heritage by UNESCO.


Japanese dining manners start with saying "itadaki-masu" and end with saying "gochisousama-deshita." These phrases embody gratitude for consuming the life of the ingredients and gratitude for the persons preparing the food. This plan is your opportunity to learn the essence of Washoku from a master Washoku chef in Hiroshima, Setouchi Region. Nature abounds here, making it a perfect place to experience the Japanese ethos.


A master Washoku chef will share his traditional skills, including how to rinse for delicious cooked rice, how to clean and prepare fish, flavorings, and procedures unique to Washoku, and more. Participants will learn how to cook sushi and tempura, both well-known as parts of Japanese cuisine.


In addition, participants will learn Japanese manners for eating and the etiquette for Washoku that are based on concern for valuing others. Specifically, this includes the proper way to hold chopsticks and rice bowls and the way dishes are eaten. Experience the behavior that conveys class and respect in Japan.


The menu changes according to the season. Ingredients that cannot be obtained in the season cannot be used, and extra costs may apply depending on the ingredient.

•Ingredient selection option: Start your experience by selecting ingredients with a professional chef. 29,200 yen per group (1 hour・including tax).

•Depachika tour option: Depachika—the basement level of a department store—is the place to see rising food trends. This tour will take you to the alluring depachikas of Hiroshima. 14,600 yen per group (1 hour・including tax).

•Sake Sampling option: Hiroshima is known as one of the three top sake producers of Japan. Select five out of ten Japanese sakes produced in Hiroshima to try. 2,950 yen (including tax) per person.
