And then you will enjoy the most popular seasonal sake testing and the representative brands of Tenryo Sake Brewery.

【DETAILS】

This old Sake Brewery’s Factory is located in Hagiwara town, near Takayama and Gero Onsen.
The tour starts at Tenryo Brewery. A sake expert will explain to you how sake is produced step by step. Once you understand the sake brewing process, you will taste 2 types of sake to enjoy the different flavors. If you want, you can choose the premium sake testing which lets you drink up to 5 types of sake. You will also have the opportunity to buy as souvenirs the finest sake to take at home.

【Features of Tenryo Brewery】

Sake is an alcoholic drink made from fermented rice. The essential ingredients of making sake are rice, water, koji mold and yeast.

◆ Tenryo's sake is made only with the highest quality variety of sake rice.

Only rice for sake making is used and only the highest quality grain.
◆ The high quality rice is polished into perfection
Rice grains are polished before use in the sake production because the grains' outer layers create undesirable flavors in the end product. In order to elaborate a premium sake, Tenryo Sake Brewery uses a computerized system to polish the rice.

◆Tenryo's sake is made only with 100% natural water
Water from waterworks is usually laced with iron and other impurities, Tenryo's sake sake uses water from underground reservoirs. This allows Tenryo's sake to be made without any impurities or the addition of any chemicals. 

【What's "Toji"?】
◆Toji
The most important person in the sake process is the chief brewer or “Toji”. The chief brewer supervises all the processes of making sake. From the selection and handling of raw materials, the extraction of sake, storage to it's aging. A good "Toji" is difficult to replace and companies work hard to find successors to them.
