The kelp resting in the warehouse was transported from Hokkaido by the historic Kitamae-bune (cargo ships). It has been perfected by Tsuruga's cool climate and unique aging culture, which deepen its umami. This is a place where history and master craftsmanship truly come alive and can only be witnessed here.
The live demonstration of "Oboro Kombu Suki" by a master craftsman is a unique Japanese experience that symbolizes the "UMAMI Culture" currently gaining significant attention in the West. This is a precious opportunity to witness this delicate technique up close.
