Sake is a Japanese rice wine.
Nigorizake or unrefined sake was the main type of Japanese sake until the clear sake we know today – called Seishu or refined sake – was developed in Itami.
"Refined Sake" made in Itami has been very popular since the Edo period (about 400 years ago) and the brewing industry has long contributed to the prosperity of the town.
Enjoy the atmosphere of historical sake breweries, trying "Refined Sake," and shopping and walking around the town.

1. Learn the basic background of the Former
Okada Residence and Former Ishibashi Residence and the history of refined sake in Itami. 20 minutes
The staff will give you a briefing on the basic background of the Former Okada Residence and Former Ishibashi Residence,
and the history of refined sake in Itami.These are the oldest townhouses existing in Hyogo Prefecture. They were built in the 17th century, and are a rare and valuable historical site even at the national level.
The brewery of the Former Okada Residence is the oldest in existence, and is extremely important c ultural property within the history of sake brewing in Itami.
The briefing is given in Japanese. A licensed guide will be arranged for translation.
2. Visit Konishi Brewing Company (including Choujugura Museum) 20 minutes
Visit Choujugura Museum, where approximately 200 tools used by Toji and Kurodo (professional sake
brewers) from the Edo period are on exhibit. It's an interactive and hands-on museum where you can have fun while leaning about sake and beer.
■Exhibition of the process of sake brewing in Itami
Itami's sake gained a reputation for superior quality and taste during the Edo period. This history is reproduced with a display of the tools that were actually used, dividing the whole process of sake brewing into seven parts.
■Fortune Photo Spots
You can take 3D photos with unique and special images such as large brewing tubs, paddles and decorative barrels. A Great spot for taking commemorative pictures with family and friends.

■Exhibition about Shirayuki (white snow)
Have a look at the extensive lineup of Shirayuki Brand sake and the exhibition about the history of marketing aimed at developing new products in keeping with the times, including visual aids such
as old TV commercials. Shirayuki Brand products have been favored by writers and artists across history, including many who had a strong relationship with the Konishi family. Among these , Rai Sanyo, a prominent writer and historian in the Edo period visited Itami frequently and wrote "Poems
in Praise of Shirayuki." We exhibit materials and articles associated with him to explain our relationship with Rai Sanyo.
3. Taste and compare sake at Choujugura Shop (sample several different sake) 20 minutes
The shop has Japanese sake, local beer made at the brewery at the back of the restaurant, and various brands of beer imported from Belgian breweries as well. If you do not know what to buy, please refer to the product information indicating our president’s recommendations, and have a try. For children and those who do not drink Japanese sake, we offer homemade Nara-zuke (pickles) and many kinds of sweets made from sake lees such as sake cakes and sake doughnuts.
