【Outline】

Learn about Japanese cuisine though real soba making after feeling the history of Japan from a national treasure, Kamakura Daibutsu (the Great Buddha). Soba (buckwheat noodles)  is one of the traditional dishes of Japan.

In this plan, an experienced soba chef will kindly teach you how to make and eat a real soba. 
A beginner can therefore learn a lot and taste your own homemade soba in a traditional way.

【Details】

Experience the whole process of soba-making, using one mixing bowl per person. (If your party has 3 to 4 people, two people will share a bowl.) Please make sure to bring an apron, a handkerchief, and a hand towel. (There are a few for lending.) We are located only one minute away from a national treasure, Kamakura Daibutsu---you can easily experience soba-making right after visiting the Daibutsu.

First, there will be an explanation on how to make soba and then you will actually start making. Soba-making can be separated into several steps; you will experience the whole process of this soba-making. After cooking, you can decide how your soba will be finished into a soba dish.  You can choose one out of four types of menu.  Then you will eat your soba while leaning the traditional etiquette of eating soba. With a soba chef and an English textbook, even a beginner can learn deeply about real soba. Also, don’t worry if you are a vegetarian/vegan, we have an alternative menu for you.

At Kamakura Hase Shiori-an we have an original way of making soba noodles called ”twin-dragon style".  The method enables even a beginner to make "juwari" soba (100% buckwheat ) which has firm, yet smooth texture.

We are very selective in choosing buckwheat flour; we only use those from the famous production districts in Japan, which are Hokkaido, Aomori, and Gunma. In merely two hours, you will learn about Japanese cuisine, historic soba, and how to make and eat soba.
