【DETAILS】

Himeji, known for its magnificent castle, was once called Harima Province. They say Japanese sake using koji mold was made in Harima for the first time in Japan more than 1300 years ago. That means Harima is the home of Japanese sake. Why not visit the sake brewery that has been in business for more than 100 years and get familiar with Japanese sake?

Go around and look at the seven wooden brewing houses since Meiji Era (1868-1912). When you enter the brewing house and see the old sake-making tools used at the time of the foundation, you may feel as if you traveled back to 100 years ago. You can learn how to make sake today by watching the photograph panels and brochure in English. Sake is produced here manually and elaborately, using carefully selected locally grown rice, by young brewers with a female Toji not very common across Japan. 

Sake produced here won awards in various contests at home and abroad.  The brewery's top grade Daiginjo sake was named after the founder's younger brother who contributed to the growth of Judo in France and  was called "the Father of Judo in France. 

After the tour, now it's time for sake-tasting! You can try more than 10 kinds of sake and receive a detailed explanation on the characteristics of aroma and flavor of sake from the specialized staff. Due to its small production, many kinds of the sake can only be tasted here. If you are a beginner, the staff will recommend you mild sake easy to drink. For those who do not care for alcohol, alcohol-free Amazake (sweet drink made from fermented rice) is offered. You can buy rare sake only available here, local specialty and sweets at the shop. A happi coat in navy blue or pink will make you feel like a sake craftsman! Why not take a keepsake picture?

Healthy dishes using fermented food such as salted rice malt and sake lees are served at the restaurant converted from a sake brewing house actually used until some 60 years ago. Surrounded by the high ceiling, thick beams and tables using the lids of sake barrels, you will fell the meal more tasty.
